Fluffy Pancakes
  1. Start with room temperature ingredients. Cold eggs and milk can result in clumpy batter.
  2. Don’t omit the baking soda and lemon/apple cider vinegar. They’re very important.
  3. It’s okay if there are some lumps in the batter.
  4. You can add 1 tbsp of cocoa powder to make chocolate flavored pancakes or 1 tsp of vanilla extract for vanilla flavored pancakes.
  5. Letting the batter rest for at least 5 minutes before cooking allows the baking powder to activate and helps the pancakes rise.
  6. After every pancake, use a paper towel to wipe your non-stick skillet or griddle before reheating for the next one. This is to ensure they all have that nice brown surface.
